State Requirements: Texas requires a
person in charge of a food establishment to have a Certified Food
Protection Manager (CFPM) on premises at all times and demonstrate
knowledge of food safety as outlined in FDA Food Code. Taking an
approved Certified Food Protection Manager (CFPM) Training Course and
passing an Exam is how to get certified. Local requirements may mandate
Food Handler Training and exceed the state's minimum requirements.
